Why not do a disassembly of new 5k 2017 model?
These questions are very important to me:
Can I update my CPU i5 3.8 (7600k) with i7 4,2 (7700k), the phase corresponding in watt?

To start with it turns out the system is very similar to the older 2015 model so a full teardown won't offer much from a repair perspective.
Yes, understanding the internals can be useful for future upgrading! So to help you see the insides, take a look at this video: Unboxing and Teardown of the 2017 27" iMac retina 5k OWC did.

As for upgrading the HD with either your own HDD or SSD drive you will need the OWC in-line sensor: OWC In-line Digital Thermal Sensor for HD Upgrade (HDD or SSD) for 27" iMacs 2012 and Later
The CPU does appear to be upgradable (socketed)
Not sure I understand what you mean by 'Phases' are you asking how many cores or threads the CPU offers? The EveryMac listings should answer that based on what model you are thinking of as well as the GPU and VRAM each uses.

If you can I would recommend paying the extra getting the i7-7700 CPU and the largest PCIe SSD you can Vs trying to upgrade either later. If you review the IFIXIT guides you'll see its a lot of work just getting into the system if you've never opened one of the 'Thin Series' iMacs before. In the case of the SSD Apple is still the only source for this custom PCIe SSD so if you later decide to upgrade or install it, it will be quite expensive!
I have buy the model: i5 7600k 3,8Ghz, 2Tb hdd and 128 Gb ssd. this configuration is big limit in the Apple Store.
For phases, I meant feeding phases current PWM, to power the cpu i7.
Why are you limited to the i5 model? Availability or you can't get it in your country. Where are you? Country and city. You may need to make a quick visit to another country ;-}
Apple systems only support single phase 120/220 volts at 50 or 60 Hz with their systems power supplies.
If you have Three Phase power (click to learn more) you'll need to get a local electrician to setup the proper outlet for your computer. Most three phase services can be broken down into lower voltages by mearly using different legs of the feed. I do recommend getting a good fill-in UPS as you can encounter dropouts. As an example our office building has power issues during the summer and during mild winter storms so all of our systems have UPS's.
Your systems power consumption runs between 63 W (Idle) 240 W (CPU at Max load). Apple does not offer information on the discreet components only the complete system.
Apple demands far too much money for their blade SSDs! Does the 2017 iMac have a socket for an SSD on the motherboard? MaxUpgrades and MicroSataCables made "Blade" to mSATA adapters that allowed us to install an aftermarket SSD on the 2012 iMacs. Will these work with the 2017 iMacs?
Sorry jprokos - The mSATA M.2 drives won't work in a NVMe based system.
Even the M.2 NVMe drives still won't work! As Apple has a custom driver for their SSD's. So you're stuck on using the Apple blade SSD. Besides, it's a bear to open the 'Thin Series ' to even get to the back side of the logic board.
I don't see this as a win no matter how you slice it. The cheaper & less risky solution is to buy the SSD only iMac system with as large a SSD you can afford.
Don't forget the Apple’s SSD is still the fastest SSD out there! Only Samsung's M.2 x4 NVMe gets close.

NVMe M.2 drives do work with the iMac 5K 2015 and 2017 as well as the Macbook Air 13" 2015 and the Macbook Pro Retina 13" 2015 out of the box with the correct adaptor. It appears that only particular versions and brand of the adaptor works well.
The 2013-2014 Macs need a modded firmware to work well.
@danj has mentioned in another thread that adaptors might have massive CRC issues, but he did the test 1 year back. No sure if the adaptors that the Macrumors users are using are newer versions that seem to work very well.
Check out this link. Someone used a Samsung EVO 970 drive in his iMac 5K 2017 without any issues.
The HDD is upgradable without a thermal sensor if you use a temperature control app.
You can use Macs Fan control or SSD fan control. Both will work.
The SSD only version comes with a 3.5" Hard Drive bracket but not the SATA cable.

The blade SSD models does not come with the cable or mounting hardware for the SATA drive.
@danj That is incorrect. They come with the 3.5 inch HDD SATA bracket but not the SATA cable. I’ve disassembled a customer’s iMac 5K 27inch 2017 before.
Thats not what I said! I said the SATA cable and the mounting hardware (bushings and screws)
So the HDD brackets are just kinda rattling around in there?

This doesn't seem to be the place to tell people to just buy the better one... We are here for a reason. We already have it and want to upgrade it. Maybe at the time it was purchased upgrading hadn't gotten to where it is now.

Does the 27" 5k 2027 SSD only model still have the HDD brackets installed, asked at Apple store but not much luck with an answer, they didn't seem to realise you could get a SDD only model.

John - Good question!
We'll need to wait till someone opens up a SSD only model. The OWC vid below is a Fusion Drive config so it had the drive. Even still, the brackets are the standard ones the 'Thin Series' uses so you can get them and remember, you'll still need to get the custom SATA cable anyways to add the drive.

Andrei, your system supports two drives one SATA (HDD or SSD) and one Custom PCIe Blade Drive (SSD only)
