Why can't i change my text message tone and assign different sounds to different people!?!??! I DO NOT like this at all!! Befor this update on my Note 8 i could and now i cant!!!

Samsung has removed this from the stock Samsung Messaging app for now.
As a workaround, download "Android Messages", made by google.
They still have the feature you are looking for.

With this app, apparently, you lose the ability to schedule messages. Samsung needs to step up and return this important feature.
You still can. Download whatever audio you want to use, then go to My Files > Audio, long press one of the audio files until its selectable, select which ones you want, press move, go back until you can select internal storage, then select “move here". Then you can go to each message contact and change the message tone in settings.
