My Girlfriend spilled coffee over her Macbook Pro, and I'm trying to retrieve her data.
I haven't removed the hard drive yet, but this is a completely different operation than the HHD retrievals I've dealt with in the past.
What adapter should I use?

Yes, if you have a PCIe SSD, you can use a PCIe to USB adapter.

Sorry @avanteguarde - This adapter is strictly M.2 not Apple's custom physical interface.
You'll need the OWC adapter: OWC Envoy Pro Portable, Bus-Powered USB 3.0 Enclosure - For Apple Flash SSDs (June 2013-Current Mac Models)
Like I said, if it were PCIe.
Both are PCIe and are very different interfaces. M.2 which is what your adapter deals with and then theres Apple which is different!
@danj, yes I know that, but OP said Apple stated its a PCIe.
You're assuming the physical interface is the same as the hardware interface. So lets look at this this way:
Software/Hardware/Physical
NVMe/PCIe/M.2
NVMe/PCIe/Apple
As an example different light bulbs the filament technology is the same across, but the bases can be very different. So you can't use a bayonet in a screw type socket. This is the same here. the Physical connector is not the same.

I just got off the phone with Apple, and they confirmed my suspicions: The hard drive is a PCIe SSD (PCIe solid-state drive). Would this (https://www.amazon.com/StarTech-SATA-Dri...) adapter be useful in retrieving the data? Thanks in advance!

This adapter is for a 2.5" SATA drive. Your drive is a custom blade SSD.
